this morning i was greeted by the most beautiful taste of summertime. a gorgeous red peony. life has been hectic and i have struggled to garden this year, so this really made my day bright. cheers for spontaneous beauty!
yesterday morning we ran in the oregon rain. my friend sarah came by after the older kids went to school and we ran through irvington with the little girls. i love running in irvington…the houses are beautiful, the gardens lush & interesting & many of the streets have huge, wonderful trees. it’s always a challenge to get motivated when it is cold & wet, but the run itself was cool, easy & rejuvenating!
rainy day running inspired some rainy day baking. we saw some gorgeous strawberries at the store and i decided on the spot that it was time for some strawberry & white chocolate chunk muffins. i couldn’t find a complete recipe that i liked, so i tweaked mark bittman’s sweet & rich muffin recipe from how to cook everything. luckily i had two small helpers and with the input of aidan & frankie, churned out some rather tasty treats. i’m really enjoying this new theme of running & eating.
if you are feeling hungry now, here’s the pieced together recipe (tweaked mark bittman’s sweet & rich muffin recipe):
3/4 stick of room temperature unsalted butter
1 cup sugar
3/4 teaspoon salt
3 teaspoons baking powder
2 cups flour
2 fresh eggs (thanks ginger!)
1/2 – 3/4 cup whole milk
2 cups fresh chopped strawberries
1 1/2 cups white chocolate chunks
preheat oven to 400˚F. grease your muffin tins. i used paper muffin liners. cream butter & sugar. (i used my mixer) mix together dry ingredients. beat eggs with milk. alternate dry & wet ingredients to the butter/sugar mixture until combined, but not smooth. add starwberries & white chocolate chunks gently by hand. scoop into muffin tins…fill almost to the top. bake for 25-30 minutes until nicely browned. yum.
today was really lovely. micah took the boys to school and i was able to catch some extra sleep with coco until frankie woke up at around 8:30. we had some coffee, ate a bit of breakfast and then built a huge tower with blocks.
frankie & i stretched for 20 minutes and then we all three went on a run. it was my first time running with the chariot cougar (thank you friends & family!) and it was pretty smooth (considering that the girls are 40 extra pounds) we ran 3.51 miles through irvington. not too shabby. i need to make some invigorating playlists for future runs…love the avett brothers, but not great for running! moments after we returned home it dumped rain, so we felt pretty lucky.
frankie took a short snooze after lunch and coco & i decided to make cookies for the boys. i remembered seeing a great recipe on stir & stitch for cow pie cookies (thin, buttery chocolate chip cookies). an hour later they were ready to sample. yum. after running, i didn’t even feel guilty.
